For the second day of The World-Herald's 12 Days of Cookies, we have our first candy. Candies are often an important part of the holiday cookie tray, so we broadened our contest this year.

Sherry Coughlin submitted this recipe. “My friend Amy has given me these candies over the years and they are wonderful … actually they are better than wonderful,” she said.


8 cups peanut butter

2 cups margarine

12 cups powdered sugar

12 cups Rice Krispies

5 16-ounce bags semi-sweet chocolate chips

2½ bars paraffin wax


Cream together peanut butter, margarine and sugar. With your hands, mix in Rice Krispies.

Roll into 1-inch balls.

Use a double boiler and melt chocolate chips and wax. Dip balls into mixture.

Tip from Amy: If I make the whole recipe I divide it in half and use two bowls — otherwise my mixer starts to smoke.

Test kitchen notes: I made a half batch and I would agree with Amy. It was about as much as my hand-mixer could handle. A half batch made about 100 peanut butter balls. I made the candies over a few evenings, which helped. I mixed the middle and refrigerated it. Once cold, it rolled into balls easier. I then refrigerated them again so the ball stayed together better when dipping in the chocolate.

They are delicious. The samples I brought into work disappeared quickly.
